I've always loved to cook, although I'll admit, it was hard to find motivation when I was living at home. But, ever since I got a hubby to cook for, I've had a blast trying different recipes that work with our sometimes weird schedules that have us eating dinner at 8:45 one night and 5:00 another.
So without further ado, some of our favorites:

We got this awesome spiral slicer for our wedding (see my obsession with other kitchen gizmos here) and I have loved using it for zucchini noodles. It is ridiculously easy. Throw a bunch of stuff in a food processor, heat up the noodles with some olive oil, and you're done!
Time: <1 hour Difficulty: 5/10 Deliciousness: 9/10
Why yes, I do love cilantro. Why do you ask?
So the only reason I bumped up the difficulty for this one is the hassle of chopping cilantro/shelling shrimp. Basically I'm lazy and don't want to do that. Plus you end up using more dishes than I like to dirty up at one time. But they were SO STINKING GOOD IT'S ALL WORTH IT.
Homemade Pizza
Time: >1 hr Difficulty: 4/10 Deliciousness: 8/10
Yet another awesome kitchen gadget was in use here. In fact, we pretty much planned to make homemade pizza just so we could use it. I used this pizza crust recipe, which was good, but takes a long time to make, not even counting oven time (mostly waiting to rise time). But, if you don't have the patience for homemade pizza, there is always Papa John's - which is in fact the best pizza. Hands down. Just try to fight me on this.

So easy, and totally customizable to whatever you like. Pro tip: LAYERS. Layer chips, then beans, onions, cheese, olives, whatever, then repeat. Also, there is no such thing as too much cheese. Bonus points if you watch Nacho Libre while/after eating these.

To be honest, I was hoping to put our dinner from last night on here: Crockpot Chicken Cordon Bleu. But I kind of hated it.
Oh well. I'll stick to nachos :)
